These easy vegan coconut cream popsicles are bursting with peach flavour!

Is there anything better than a perfectly ripe peach?? I feel like there are few food experiences as indulgent as sitting with the sunshine on your face enjoying a juicy peach as the juices dribble down your chin. So there is a good reason why peaches and cream is such a classic dessert pairing…and I wanted to capture this perfection in these incredible peaches and coconut cream popsicles!  

The dietitian in me loves dreaming up plant-based recipes that help us eat more fruits and vegetables – particularly ones that feel as indulgent and exciting as a rich blueberry sorbet, my almost instant strawberry coconut sorbet or these vegan peaches and cream popsicles. 

Peaches really hold a special place in my heart: I remember driving through the Okanagan (our local wine region) as a child stopping at all of the roadside farm stands, snagging baskets of ripe peaches, picked fresh the day before and having to eat them outside of the car because they were so juicy and ripe that they were nearly impossible to eat without making a mess! So I’m on a mission to get some more peach recipes on my site to celebrate this goodness, like my blackberry peach crisp.

Also, coconut makes a really good base for a vegan popsicle! Sometimes I lean into that coconut flavour, like my lime, cilantro (yes, cilantro!) and coconut milk popsicles. But you actually won’t taste the coconut in these peaches and cream pops. The coconut simply creates a creamy, ice cream like base.

All you need to make peaches and coconut cream popsicles

These super simple popsicles are essentially just fresh peaches and coconut cream, with flavour boosters…so 5 everyday ingredients are all you need!

These flavourful peaches and coconut cream popsicles are just fresh peaches and coconut cream, plus vanilla, sugar, lemon juice and salt!

Peaches: using perfectly ripe fresh peaches will create the best, most complex flavour in these popsicles but in a pinch you can totally use frozen peaches!

Coconut cream: coconut cream has a higher fat content than coconut milk so it creates a creamier, more ice cream-like texture in these vegan popsicles

Cane sugar: I am using just a little bit of real sugar to enhance the flavour of the peaches without adding extra liquid to the pops to preserve their creaminess. If you’re using super sweet peaches, you can leave it out – and you can also substitute a monk fruit sweetener if you prefer.

Vanilla: essential to making these popsicles taste “creamier” and more like ice cream

Freshly squeezed lemon juice: the acidity of lemon juice helps make these flavours pop so the popsicles have even more flavour, as does the small amount of salt I add (don’t skip it!)

Low waste tip: Yes, this recipe calls for 1 cup of coconut cream which means you’re going to have some leftover coconut cream. Just freeze it in ice cube trays or silicone muffin cups and then transfer to a freezer bag for use in smoothies and recipes later on!

How to make these vegan peaches and cream popsicles

These quick peaches and coconut cream popsicles are the perfect low effort treat…the hardest part is waiting for them to be frozen so you can gobble them up! They come together in less than 5 minutes of hands on time…although hands on is a bit of a stretch as the blender is doing most of the work!

Just blend up the peaches, coconut cream, vanilla, sugar, lemon and salt until creamy and smooth!

then pour into your favourite molds and freeze until solid, 6-8 hours.

Step One: Add the peaches, coconut cream, sugar, vanilla, lemon and salt to a high speed blender and blend until smooth, about a minute.

Step Two: Pour into popsicle molds and freeze until firm, at least 6-8 hours depending on your freezer. My freezer has a quick freeze mode and in 6 hours, they are ready to eat.

I love a classic paddle-shaped popsicle mold but use whatever you have on hand!

FAQ: can I substitute coconut milk for coconut cream?

Coconut cream and coconut milk are both made from coconut flesh and water but simply differ in their fat content so yes, you can totally substitute full fat coconut milk for coconut cream it will just be slightly less creamy.

Tips, Tricks and Substitutions

You can store these popsicles in the freezer for up to a month for best flavour! Want them more creamy, less firm? Then just remove your popsicle from the freezer 5 minutes before you want to eat it.

Yes, you can totally use frozen peaches for this, you’ll need 3 cups. Frozen peaches often aren’t as flavourful or sweet as ripe peaches so be sure to taste the mixture after blending and adjust sweetener to taste!

If you can’t find full fat coconut cream, substitute full fat coconut milk. The popsicles may be a tiny bit less creamy and a tiny bit more icy but still very delicious!

Instructions

Place sliced peaches, coconut cream, sugar, vanilla, lemon and salt into blender and blend until smooth and creamy, about 1 minute.
